Become an Elderflower Expert!

Elderflower Cordial has now firmly established itself as a luxury supermarket item – you can pay anything up to £5.00 for a bottle now which seems quite excessive when you think that it was once a humble country concoction.

If you are tempted to make your own elderflower cordial – now is the time. Apparently you need to pick them before noon, as the aroma fades once the afternoon sun hits the flowers.  Pick the heads off the flowers, making sure that they are a perfect white – avoid the ones that are beginning to turn a browny colour.

We prized this recipe out of a reader who has been making Elderflower cordial for ever and, apart from the picking, it took us 15 mins to make and 3 days later we were able to drink it. Its delicious but don’t fool yourself that it’s healthy  - we were amazed how much sugar went into it. 20 heads of elderflower

1.8 kg granulated sugar, or caster sugar

1.2 litres water

2 unwaxed lemons

75 g citric acid

Pick flower heads, doesn’t matter what size, larger the better. (shake off any insects!)
Put in large bowl, and add all the ingredients, lastly the water
Leave for 3 days in the fridge
Strain, sieve, bottle and freeze.
( Freeze in small 1/2 l plastic bottles)
